STIR FRY ASPARAGUS AND MUSHROOMS

"Great veggie dish!"

Ingredients

  • lb asparagus, trimmed
  • 4green onions, sliced in 1/2-inch pieces
  • 1⁄2lb mushroom, sliced
  • 2small tomatoes, each cut into 8 wedges
  • 1tablespoon cold water
  • 1teaspoon cornstarch
  • 2teaspoons soy sauce
  • 1tablespoon oil

Direction

  1. Cut asparagus at an angle into 1" pieces.
  2. Saute asparagus and green onion in oil for 4 minutes.
  3. Add mushrooms and cook 1 minute longer.
  4. Mix water, corn starch and soy sauce.
  5. Stir into asparagus until thick.
  6. Add tomatoes and toss.
