SPICY THAI GRILLED CHICKEN

"Delicious cooked under a grill or barbecued--easy to prepare."

Ingredients

  • skinless chicken breasts or 4 skinless chicken thighs, boned
  • 2teaspoons paprika
  • 2teaspoons ginger, grated
  • 1teaspoon ground cumin
  • 1⁄2teaspoon ground turmeric
  • 1teaspoon sambal oelek (ground chilli paste)
  • 1teaspoon lemon zest
  • 1⁄4cup lemon juice
  • 1tablespoon fresh coriander, chopped
  • salt
  • 2teaspoons oil

Direction

  1. Combine all the above ingredients and marinade meat for as long as possible, turning occasionally.
  2. Cook under grill or barbecue for 3-4 minutes each side.
  3. Serve with salads hot or cold and Gujarati Potatoes.
