LOW-CARB, KETO, SHRIMP AND SAUSAGE GUMBO

"Low-Carb, Keto dish with shrimp, sausage pieces, shrimp stock, and veggies."

Ingredients

  • b shrimp, skins
  • 1jalapeno
  • 1⁄4cup yellow onion
  • 2celery ribs
  • 3bay leaves
  • 2garlic cloves
  • 2shakes cajun seasoning

  • GUMBO

  • 3tablespoons guar gum (Healthy Thickener)
  • 1green bell pepper
  • 2stalks celery
  • 2bay leaves
  • 1⁄4cup yellow onion
  • 1lb hot Italian sausage link
  • 1lb raw shrimp
  • 2tablespoons cajun seasoning
  • 1⁄2tablespoon black pepper

Direction

  1. Peel and Devein Shrimp.
  2. Put shrimp aside in bowl.
  3. Place skins in pot.
  4. chop and cut all veggies in broth ingredients. Crush bay leaves with hand then place in broth. Mince garlic cloves.
  5. Pour 6 cups water into pot and place lid on pot.
  6. Bring pot to a rapid boil.
  7. Shake broth seasonings in water.
  8. Place stove-top heat down to "low" setting.
  9. Let broth simmer, covered, for 1 hour.
  10. Strain broth and set aside.
  11. Cut sausage into 1/8 inch slices.
  12. Chop all veggies and set aside.
  13. Put teaspoon oil in large skillet or stock pot.
  14. Set skillet to medium-high heat.
  15. Add veggies and all gumbo dry seasonings.
  16. Saute veggies and crushed bay leaves until tender, about 10 minutes.
  17. Pour in the reserved shrimp broth and bring to a boil. Simmer, covered, about 15 minutes.
  18. Add the shrimp and sliced sausage and simmer 10 minutes more, or until sausage is cooked through.
  19. Add salt to taste.
  20. Evenly sprinkle some guar gum onto gumbo and stir inches Add gum until desired thickness is achieved.
  21. Serve.
