EASY BLACK BEANS AND RICE

Ingredients

  • teaspoon olive oil
  • 1large onion, chopped finely
  • 1red pepper, diced
  • 3cloves garlic, minced
  • 3⁄4cup uncooked white rice
  • 1 1⁄2cups vegetable broth, see my recipe posted or use store bought
  • 1teaspoon ground cumin
  • 1teaspoon curry powder
  • 1⁄2teaspoon cayenne pepper
  • 4cups canned black beans, drained

Direction

  1. In a stockpot over medium-high heat, heat the oil.
  2. Add the onion,pepper and garlic and saute for 4 minutes.
  3. Add the rice and saute for 2 minutes.
  4. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes.
  5. Add the spices and black beans.
