CREOLE BAKED CHEESE RICE

"I found this on a Cajun website, and I'm so happy I did."

Ingredients

  • 3cups cooked rice
  • 2cups grated cheddar cheese
  • 1cup chopped green pepper
  • 1⁄2cup chopped green onion
  • 2eggs, beaten
  • 1 1⁄4cups milk or 1 1/4 cups half-and-half cream
  • 1teaspoon salt
  • 1⁄4teaspoon cayenne pepper
  • 1⁄2cup seasoned bread crumbs
  • 1tablespoon melted butter
  • Tabasco sauce

Direction

  1. Arrange alternate layers of rice, cheese, peppers, and onion in buttered baking dish.
  2. Mix eggs, milk, salt, and pepper (and pepper sauce) and pour over rice and cheese.
  3. Top with breadcrumbs and butter.
  4. Bake at 350 degrees for 45 minutes until set.
